Mom's Mac and Cheese Recipe
Ingredients
- 1lb penne pasta
- 4c milk (can substitute 1c w/ unsweetened condensed milk)
- 4tbs unsalted butter
- 6tbs unbleached, all-purpose flour
- 1tsp paprika
- 12oz Gruyère cheese (grated) (Cheddar, mozz, or Jarlsberg can be substituted or included)
Recipe
- Boil water. Cook penne, rinse and set aside.
- Preheat oven 350˚F
- Bring milk to “barely a boil” in heavy sauce pan
- While warming milk, melt butter in additional heavy sauce pan. Add flour and whisk over low heat for 5 min. Do not brown. Remove from heat.
- Add hot milk to flour mixture and whisk well. Add 1/2tsp of paprika and season with salt and pepper while returning pan to heat. Over medium heat, which constantly until mixture thickens (~5min). Add penne until completely coated.
- Butter 13x9 pan and fill with penne/sauce mixture.
- Distribute grated cheese evenly over penne and sprinkle with black pepper and additional paprika.
- Bake for 20-25 min.
- Broil on High 4in from heat until top is browned (~4min). Serve immediately.
