Carrot Cake Recipe
Ingredients
CAKE
- 1.5c vegetable oil
- 2c sugar
- 3 eggs
- 2c flour
- 2tsp cinnamon
- 2tsp baking powder
- 2tsp salt
- 2tsp vanilla
- 2c shredded carrots
- 2c nuts (walnuts, usually bash their brains out with rolling pin first. Or buy pre-bashed).
- 7oz shredded coconut
- 1 small can crushed pineapple
FROSTING
- 8oz cream cheese (Philadelphia brand)
- 0.5c butter
- 3c powdered sugar
- 1tsp vanilla extract
- water
Recipe
- Preheat oven to 350 degrees
- Cream oil, sugar, eggs
- sift together flour, cinnamon, baking powder and salt. Add to creamed mixture from 1.
- add vanilla to mixture from 2.
- add carrots, nuts, coco-nut(s), and pina to mixture from 3.
- Put into bundt pan. Bake for 55 min
- Beat cream cheese/butter together
- Add vanilla to frosting. Mix sugar in 1c at a time until consistency/sweetness level is reached. Augment with water if required.
